I had half of a can of pumpkin left and have been meaning to use it up. Last night, I made these cookie
s and they really are just a subtle fall pumpkin cake-y sugar cookie. Delicious, and even better on Day 2. It seems like that is always how it works, but for something to make it to Day 2 is the challenge. :-)
Pumpkin Sugar Cookies
- 1 cup butter flavored shortening
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
optional - cream cheese frosting
Combine wet ingredients, then add dry ingredients. Bake at 350 for 8-12 minutes, erring on the side of underdone. Let them cool on a wire rack and enjoy!
