Homemade Cheeze It's


Homemade Cheeze It's    

So so simple, and really delicious.  Two ingredients - thinly sliced cheddar (regular works well too but takes longer to cook) and sea salt!  Cut into squares and cook at 275 for 20-30 mins, until done to your liking.  You can poke with a straw if you want it to look like a cheeze-it, or let it ride and go for basic squares.  Some also do piles of shredded cheese, though that will look a little different and I love the simplicity of this as it is.

Peanut Butter Energy Bars



I made these with my sister Kat a couple of months ago and they are SO good!  They are supposed to be a pre or post run snack, sort of a healthy, homemade granola bar of sorts.  This is the sort of thing that I could just take a spoon to though, so I'll have to be careful, but they are definitely worth posting. :-)

Peanut Butter Energy Bars
1 C. dry oatmeal
2/3 C. toasted coconut flakes (I didn't toast mine)
1/2 C. sunflower seeds
1/2 C. peanut butter
1/2 C. ground flax seed or wheat germ (I blended my flax seed and it worked perfect!)
1/2 C. chocolate chips
1/3 C. honey
1 tsp. honey

Stir all ingredients together in a medium bowl.  Let chill in the fridge for half an hour.  Roll into 1" balls if you like, or if you're lazy, like me, then press them into a greased pan and then cut to size.  Store in an airtight container and keep in the fridge for up to a week.

Makes 20-25 balls.
Optional add-ins: chopped dried fruit (apricots, raisins, berries) or nuts (almonds, pecans, walnuts)

Hard Boiled Eggs



I know this seems simple, but I don't boil eggs often enough to remember, so I always go back to the StartCooking video.  I just thought I would condense it here for my own sake.  Enjoy!

Put eggs in bottom of saucepan so that they fit tight- I get six in a small saucepan, probably 10 in a bigger one.  Add one tablespoon of salt so that they don't crack and enough water to cover all the eggs.  Cover the pan and bring to a boil.  Once the water is boiling, remove from heat and set the timer for 15 minutes, leaving them still covered.  After 15 minutes, rinse with cool water- and you're done!
