Pumpkin Sugar Cookies


I had half of a can of pumpkin left and have been meaning to use it up.  Last night, I made these cookies and they really are just a subtle fall pumpkin cake-y sugar cookie.  Delicious, and even better on Day 2.  It seems like that is always how it works, but for something to make it to Day 2 is the challenge.  :-) 

Pumpkin Sugar Cookies



  • 1 cup white sugar
  • egg
  • 1 cup butter flavored shortening
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
optional - cream cheese frosting
Combine wet ingredients, then add dry ingredients.  Bake at 350 for 8-12 minutes, erring on the side of underdone.  Let them cool on a wire rack and enjoy!
