White Chicken Chili
My friend Kathleen gave me this recipe, and since slow cookers are a working mom's best friend, I had to try. I'll be honest... I liked the chili, didn't love it. Christopher said it was his favorite that he has ever had, so that means that I will for sure make it again. I also had the leftovers for lunch for the rest of the week and I think that it is one of those recipes that tastes better after a day. It was very good for sure, and very healthy, just sort of mild, I guess, compared to other chili's I've had. Maybe that's the point. :-)
White Chicken Chili
1 small onion
1 small can diced green chills
2-3 chicken breasts
3-4 cans of white chili beans and their liquids
1 32 oz container of chicken broth
1/2 tsp. cumin
1/2 tsp. coriander
1/2 tsp. salt
pepper
Optional:
cilantro, garnish
cheese- cheddar, monterey jack, shredded and to top with
Throw everything (except cilantro and cheese!) into the slow cooker and let it go for 8 hours on low. Shred the chicken before serving! Top with fresh cilantro and cheese if you so desire. I had cheddar on hand and that was good, but keeping with the white theme, I think that monterey jack would work, too. :-) Enjoy!

Healthy Hot Wing Chicken Strippers
Jason loves his hot wings, and I love Native New Yorker's "hot strippers," although I always laugh when I have to place my carryout order for that. Full disclosure, I actually prefer the "honey hot" flavor, which just sounds even more stripper-ish.
Alas, I decided to try to make my own- and they were awesome! Super easy, very healthy and if your chicken tenders are on a good sale price, they cost about $2.oo/lb out the door, which is way better than Native's $9.99/lb, plus the extra frying calories etc.
Healthy Hot Wing Chicken Strippers
chicken tenders (about a pound, two if you have a crowd)
Frank's Hot Sauce (Buffalo, whatever, half a jar will make a pound easy)
honey, if you like a touch of sweet
ranch, if you like
If you have time and the motivation, marinate your strippers in a bag with the hot sauce. Transfer to a hot, greased grill and let cook for just a few minutes on each side. The tenders are small and thin and they don't take long to cook. Toss the grilled tenders with extra sauce in a mixing bowl (whisk in the honey with the sauce before adding the chicken, if you're so inclined) and serve with ranch.
Enjoy!

Chicken Enchiladas
Walked my a colleague's classroom right before Christmas and she called me in and offered me some enchiladas. It was early in the day, maybe 9:45 AM, and I wasn't even in a lunch food mood, but these turned me around. I tracked her down and she was generous enough to share her recipe with me. Just made it tonight for the family and everyone loved it, so it will definitely happen again.
Chicken Enchiladas
1 lb. shredded chicken
1 can of Las Palmas enchilada sauce
8 oz. shredded cheddar
8 oz. shredded monterey or colby jack
1 small can sliced black olives
corn tortillas
green onion, optional
cilantro, optional
black olives, optional
Combine the shredded chicken with about equal parts of cheese and maybe some black olives and cumin sprinkled in until it is all mixed. (You can make the shredded chicken in the slow cooker in advance, or just buy the pre-made shredded chicken near the BBQ puled pork in the grocery store. If you use the grocery store stuff, make sure you squeeze it out before mixing it up.) Heat the corn tortillas on a skilled just until warm, if you feel like it. I got carried away and forgot to do this part way through and it seemed to still work just fine. Dip a tortilla in the can of sauce and then add a handful of the chicken mixture. Roll it up and place it seam side down against the edge of a 9x13 pan. (I use my big lasagna pan.) Repeat with remaining tortillas and fill the pan. I had probably ten going length wise and then two rows of two on the remaining side, and then half of two below it to fill the pan. Pour a little bit more sauce over the top, cover with cheese (generously) and then sprinkle with black olives and green onion if you have it. Bake at 375 for 30-40 minutes, or until bubbly. It doesn't need to be covered and seemed to cook up just fine. Let it stand for five minutes before serving. I like to garnish with sour cream, green onion and cilantro, if you have it!

Quinoa Fried Rice
Made this with my sister Kat and I think it is another one you could bulk up on, make a double batch and eat for the week. Super easy and fast, and you can cook your quinoa in advance and then throw it all together.
Quinoa Fried Rice
1-2 T. oil whatever you prefer
cooked quinoa (maybe 2 C or more?)
frozen mixed veggies (peas, carrots, green beans, lima beans, whatever)
one packet of fried rice seasoning
2 T. soy sauce (to taste)
1-2 eggs
grilled chicken, optional
I cooked the quinoa in the rice cooker (cook the same way as rice) and added the cold quinoa to the wok with just a touch of oil. Stir it around, add the (microwaved and drained) veggies and seasoning. Push to the side, scramble the eggs and then mix all together.
I thought it was excellent as is but some chicken would have made it even better. Yummy and so healthy.

Ranch Chicken Tacos
Made this yesterday and it was a huge hit! So easy.
Ranch Chicken Tacos
3 lbs of chicken (give or take, I probably only used half this) - frozen or fresh
1 packet of Ranch Seasoning
1 packet of Taco Seasoning (of you could make your own)
1 15 oz can of chicken broth
Put the chicken in the crockpot. Sprinkle with ranch and taco seasoning, then add broth. Cook on low for 6-8 hours or high for 3-4 hours. Shred and serve!
I highly recommend squeezing some of the moisture out of the meat before adding it to tacos, so they don't get soggy or leak when you take a bite.
We served with
cheddar cheese
hard and soft corn tortillas
chopped tomatoes
spinach (faux lettuce)
This would also be really good to use for burrito bowls as planned leftovers.
Enjoy!

Slow Cooker Chicken Tortilla Soup
- 3 raw boneless, skinless chicken breasts
1 (15 ounce) can diced tomatoes1 (10 ounce) can enchilada sauce
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
3 cloves garlic, minced
2 cups water
1 (14.5 ounce) can 99% fat-free chicken broth
1 TBSP cumin
1 TBSP chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
Serve with sour cream and tortilla chips.
Combine all ingredients in a large slow cooker. Stir to combine. Cook on high 4-6 hours or low 6-8 hours. Remove chicken from soup and shred. Return chicken to soup, and then blend this in batches or use an immersion blender to liquify it a little. I prefer to leave SOME chunks but if you don't blend it, I think this recipe is too watery.
We like things spicy and flavorful, so I also add in a dash or two of cayenne.

Greek Feast
It was my birthday a couple of weeks ago, and I decided that I would celebrate with a Greek Feast. And a Greek Feast, we had! Here was the line up:
Greek Feast
Chicken Souvlaki with Tzaziki Sauce
Roasted Lemon Potatoes
Lemon and Garlic Rice Pilaf
Grilled Asparagus
Greek Salad
Hummus Quartet and Pita Bread
Pomegranite Seeds
Devils Food Cake with Dark Chocolate frosting, Fresh Strawberries and French Vanilla Ice Cream
We used 8 lemons and an entire CLOVE of garlic in the cooking, and easily spent over $100 in groceries, but we fed a crowd, had plenty of leftovers and most importantly, I had a great time cooking and eating.

Chicken Souvlaki with Tzaziki Sauce
16 bamboo skewers
3 lemons
2 tablespoons finely chopped fresh oregano leaves
1/2 teaspoon crushed red pepper flakes
1/4 cup extra-virgin olive oil
4 cloves garlic, minced
Salt and freshly ground black pepper
16 chicken tenders, about 1 1/2 pounds
2 cups Greek style yogurt
1/2 seedless cucumber, peeled and grated
1/2 teaspoon ground cumin
Soak skewers in water for about 30 minutes. Preheat grill to medium-high heat. Combine the zest and juice of 2 lemons, oregano, red pepper flakes and olive oil in a dish. Paste the garlic by mashing it with coarse salt then add 3/4 of it to the marinade, reserving some for dipping sauce. Add chicken tenders to the marinade and season with salt and pepper, turn in marinade to coat, let stand 10 minutes. Thread tenders on damp skewers and cook 7 to 8 minutes, turning once, until firm and juices run clear.
While skewers cook, combine yogurt with juice of remaining lemon, remaining clove of garlic, grated cucumber, cumin and salt, to taste. Divide the dip among 4 ramekins.
Serve 5 skewers per person with dipping sauce alongside.
Roasted Lemon Potatoes
3 pounds baking potatoes, peeled and cut into 1 1/2-inch cubes
1/2 cup olive oil
4 garlic cloves, minced
1 1/2 teaspoons dried oregano, crumbled
1 teaspoon salt
Freshly ground black pepper
1/2 cup chicken stock (I used water and it worked fine…)
1/3 cup freshly squeezed lemon juice
2-3 tablespoons chopped fresh oregano
Preheat oven to 400°F. Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil. Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through. If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown. Sprinkle with the fresh oregano and serve at once.
Greek Lemon Rice Pilaf
3-4 T. butter
2 cups uncooked brown rice (you could use white but I like brown better)
1/2 cup fresh lemon juice
5 cups hot chicken broth
salt & freshly ground black pepper
3-4 T. butter
2 cups uncooked brown rice (you could use white but I like brown better)
1/2 cup fresh lemon juice
5 cups hot chicken broth
salt & freshly ground black pepper
Heat butter in a heavy skillet. When it's hot, add the rice and, stirring constantly, saute on medium heat until transparent but not brown. Add the lemon juice, chicken broth, and salt.
Cover and simmer for 20 minutes.
Remove the pan from the heat and let pilaf stand uncovered for 5 minutes before serving.
Greek Salad
3 vine ripe tomatoes, cut into chunks
3 vine ripe tomatoes, cut into chunks
1 red onion, thinly sliced
1/2 European seedless cucumber, cut into bite-size chunks (I used seedless but think regular cucumber would work just as well…)
1 small red bell pepper, seeded and chunked
1 small green bell pepper, seeded and chunked
1 cubanelle pepper, seeded and chunked (have no idea what this is and didn’t use it)
1 cup Kalamata black olives (I’m not an olive fan so I skipped these)
Several sprigs fresh flat-leaf parsley, about 1/2 cup
2 (1/4 pound) slices imported Greek feta
Greek Salad dressing (you can make this with EVOO and Red Wine Vinegar but I wanted a sure thing)
1 teaspoon dried oregano, crushed in palm of your hand
1 teaspoon dried oregano, crushed in palm of your hand
Coarse salt and black pepper
Chop up the veggies and toss together. I had my guests add the dressing of their choice, shake to coat, and then sprinkle feta on top.

Honey Hot Grilled Chicken
Just made this last night off of the Pioneer Woman website and it was so good! I served it over white rice (always prefer brown, though) and grilled fresh pineapple to go with it, and it went together really well. I would suggest grilling a vegetable to go with it next time. The Pioneer Woman suggests serving it with beans, but I think the rice and grilled fruit and veggies combo fits it much better.
This sort of reminds me of Native New Yorker's Honey Hot chicken sauce, and I am considering toying with this recipe and trying to make a grilled chicken hot wing sauce, maybe using some butter and hot wing sauce to toss the chicken in after it's grilled. Jason and I had cold leftovers last night and they were delicious!
Honey Hot Grilled Chicken
6 whole Boneless, Skinless Chicken Breasts
Marinade:
1/2 cup Balsamic Vinegar
1 cup Olive Oil
3 Tablespoons Brown Sugar
2 Tablespoons Steak Seasoning (I Used Montreal)
Sauce:
1 cup Honey
8 pieces Thick Cut Bacon, Diced
3 Tablespoons Worcestershire Sauce
1 Tablespoon Hot Sauce
Preparation Instructions
Slice the chicken breasts into thick strips diagonally. Combine marinade ingredients in a plastic zipper bag. Throw in chicken, seal bag, and marinate in fridge for at least 3 hours or overnight.
Make the sauce: Fry the diced bacon in a heavy skillet until slightly crisp. Remove bacon and drain on paper towels. Pour off and discard grease but do not clean skillet. Set the skillet over medium-low heat and add honey, Worcestershire, and hot sauce. Stir to combine and allow to bubble slightly. Stir in bacon, then remove from heat and set aside.
Remove chicken from marinade and discard marinade. Grill chicken on both sides until completely done.
Place into a big heatproof bowl, then pour the sauce over the chicken. Toss to coat.

Baja Fresh Style Grilled Chicken
Just made this tonight and it was SO good! We chopped up the chicken into cubes and served it on flour and corn tortillas. I also made some tilapia in a second bag, and it turned out really well too. I think that tomorrow, the leftovers will end up on top of black beans and brown rice in homemade burrito bowls. You can use whatever type of meat or fish you like, really. I hear that Chipotle uses thighs but I'm a breast gal, myself. Very easy and effortless, with a lot of flavor.
Side Note: This was originally titled "Chipotle Grilled Chicken" but Jason and I decided it didn't have quite enough kick to be worthy of that title. So we scaled it down to Baja Fresh style. Still very good, absolutely worth making, but the search continues for a Chipotle copycat recipe.
Baja Fresh Style Grilled Chicken
4 boneless, skinless chicken breasts
1 T. olive oil
2 t. chili powder
1 t. garlic powder
1 t. onion powder
1 t. cumin
1/2 t. oregano
1/2 t. black pepper
3/4 t. kosher or sea salt
fresh cilantro, optional
lime wedges, optional.
Put the meat in a gallon size Ziploc bag, add the oil, and then toss/turn to coat all of the meat. Combine the spices, and then add them to the bag, seal it and toss and rub the meat until it is well coated. Refrigerate for 4 hours or up to 24 hours. Cook over direct heat for 5-6 minutes per side, until there is no pink in the middle. Let it rest for a few minutes before chopping it up. If you have some fresh cilantro to garnish with, and maybe some lime wedges (after squeezing the juice on top, yum!) then that would be pretty. Enjoy!

Slow Cooker Buffalo Chicken
This was ridiculously easy and a huge hit today. Pretty spicy, but a touch of Ranch dressing toned it down.
Slow Cooker Buffalo Chicken
3 lbs of chicken (can be frozen or fresh)
One packet of Ranch dip powder (this stuff is amazing)
One jar of Frank's Red Hot Wing Buffalo Sauce (don't get the Hot Buffalo unless you can really take the heat)
Rolls, Ranch and Pepper Jack Cheese for serving
Put the chicken in the slow cooker. Frozen is OK, if that is what you have- you will never know the difference later! I promise! Sprinkle the ranch mix on top, and then dump the jar of sauce on top of that. Cook on low for 6 hours, or high for 3-4ish. When it is ready, shred it with two forks and put it back in the slow cooker to meld some more. I think this helps it thicken some.
Serve on top of toasted rolls (I like the sesame seed rolls if you can find them) and offer pepper jack cheese to melt down on top of it. This chicken is also a really nice dip for tortilla chips.
Enjoy!
Oops, I just re-read the original recipe and it says that you are supposed to cook the chicken with the ranch powder on top, and then let it be until shredding, then add a couple Tablespoons of butter, let it go for an hour, and then stir in the sauce. Oops! Maybe I'll try it like that next time. I didn't use any butter and I put the sauce in up front today, and it was still fabulous.

Slow Cooker Jambalaya
Jason had a jumbalaya at the fire house a few weeks ago and thought it was fantastic. He tried to make it last week one day, but we had to throw all of it down the drain- cooked rice in the slow cooker is not a good idea. My dear friend Shanin gave me this recipe a while ago, and I plan on making this one of these Sunday's while football is on. Usually, I only post recipes that I have successfully made myself, but I am going to start adding some that I want to try too. I'l delete things is they're no good! Back to the jumbalaya, I read somewhere that this is good to pick from all day long. I'm looking forward to trying it!
Slow Cooker Jambalaya
- 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
- 1/2 pound andouille sausage, diced
- 1 (28-ounce) can diced tomatoes
- 1 medium onion, chopped
- 1 green bell pepper, seeded and chopped
- 1 stalk celery, chopped
- 1 cup reduced-sodium chicken broth
- 2 teaspoons dried oregano
- 2 teaspoons Cajun or Creole seasoning
- 1 teaspoon hot sauce
- 2 bay leaves
- 1/2 teaspoon dried thyme
- 1 pound frozen peeled and cooked shrimp, thawed
- 2 cups cooked rice
Directions
In a slow cooker, combine chicken, sausage, tomatoes, onion, green pepper, celery, and chicken broth. Stir in oregano, Cajun seasoning, hot sauce, bay leaves, and thyme.
Cover, and cook on LOW for 7 hours or on HIGH for 3 hours. Stir in the thawed shrimp, cover and cook until the shrimp is heated through, about 5 minutes. Discard bay leaves and spoon mixture over cooked rice.

Easy Enchiladas

This is a great recipe to use up leftover shredded chicken or beef. You can also fill the enchiladas with cheese or canned chicken if you really needed to. You can also split this into two pans and freeze the second one before cooking.
Easy Enchiladas
Red enchilada sauce, one 15 oz can
Corn tortillas, 5-10 depending how much filling you have to use up
Leftover meat for filling*
Cheese, shredded (I usually use cheddar but cheddar jack would be good too)
Scallions, optional
Black Olives, optional
Preheat the oven to 400. Spray an 8x8 pan (for 5) or 13x9 pan (for 10) with cooking spray. Get a bowl that is big enough to put one corn tortilla flat in the bottom, and pour about 2/3 of the can of sauce into the bowl. Dip one tortilla in the sauce and flip to coat both sides. Then fill with a pinch of your meat or cheese filling, roll up and place seam side down in the pan. Repeat until you have used all of your meat filling or you run out of room, whichever comes first. (In the 8x8 pan we used the other night, we had to have four going one way and one smashed up against the top of the row. Whatever works.) Pour the rest of the enchilada sauce over the top and then coat with cheese. You can add scallions or black olives if you like now. Cover with foil and bake for 25 minutes. Remove foil and bake or brown for another 5 minutes. Let stand for 5 - 10 minutes before serving. Yum!!!
*An easy way to cook the meat is to put whatever you are going to use (beef roast, pork, chicken) into the slow cooker and top with one 4 oz. can of diced green chiles. Maybe sprinkle some taco seasoning and salt and pepper on top too. I also like to add a can or two of DRAINED pinto or black beans, especially if I am not making a ton of meat. Cook all day on low (or half day on high) and then DRAIN the juice out of the crock pot before shredding the meat with two forks. Then add the shredded meat to the enchiladas as before. Very easy and you can make double if you want to, and then freeze the second half, or pre-make and freeze your second batch of enchiladas! Enjoy!

Slow Cooker Chicken Taco Soup

This is one of my very favorites. It is mostly canned ingredients which can be so convenient. I usually throw the chicken breasts in still frozen and by the afternoon, it is ready to shred. I tried using only one chicken breast one time, and it wasn't enough. Three is a lot, but it tastes really good like that. Two is a happy compromise. I use chicken stock usually but mainly because we rarely have beer in the house. Last time I made this I blended the tomatoes too, and it made it more chili-like, but Jason was happy that there weren't big tomatoes in the soup. Two more things- this soup tastes even better on Day 2 and if there are any leftovers, it freezes beautifully.
Slow Cooker Chicken Taco Soup
Ingredients
1 onion, chopped
1 (16 ounce) can pinto beans, undrained
1 or 2 (15 ounce) cans black beans, 1 drained, 1 not
1 cup frozen corn or 1 can whole kernel corn, drained
1 (8 ounce) can tomato sauce
1 15 oz. can of chicken stock (original recipe called for a bottle of beer, or water if you are really in a pinch)
1 (10 ounce) can diced tomatoes with green chilies, undrained (Rotel)
1 (10 ounce) can of diced tomatoes, undrained (no chilies in this can)
1 (1.25 ounce) package taco seasoning*
2-3 whole skinless, boneless chicken breasts
shredded Cheddar cheese
sour cream
optional - crushed tortilla chips, fresh cilantro
nice crusty bread to serve aside
Directions
Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, crushed tortilla chips and fresh cilantro, if desired.
Original Recipe Yield 8 Servings
*Here is a recipe for homemade taco seasoning for this soup. I think this adds to it and I do it this way if I have the time, otherwise I just sprinkle on regular taco seasoning.
1 Tbsp chili powder
1 1/2 tsp. ground cumin
1/2 tp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1 tsp sea salt
1 tsp coarse black pepper
Bowties and Broccoli

This is another really good recipe. I read a suggestion that you should saute the broccoli with the garlic and red pepper flakes, which I bet is good too. Of course, you can use any pasta that you have- although I have to admit that the little bowties are really cute.
Bowties and Broccoli
Ingredients
1 pound dry farfalle (bow tie) pasta
4 cups broccoli florets
1/4 cup olive oil
4 cloves garlic, sliced
1 cup grated Pecorino Romano cheese
salt to taste
ground black pepper to taste
optional - pine nuts, crushed red pepper flakes, grilled chicken
Directions
Bring a large pot of lightly salted water to a boil. Add farfalle pasta and cook for 8 to 10 minutes, until al dente. Drain, reserving 1/4 cup pasta water.
Place broccoli in a pot fitted with a steamer basket over boiling water. Steam 5 minutes, or until tender.
Heat the oil in a skillet over medium heat. Stir in garlic, and cook 1 minute, or until golden brown.
In a bowl, toss together the pasta, reserved pasta water, broccoli, garlic, remaining oil, and cheese. Season with salt and pepper.
Pesto Chicken
Pesto Chicken
chicken breasts
pesto sauce (my very favorite is Trader Joe's Sundried Tomato Pesto)
sliced provolone cheese
This is so easy and really good. Grill some chicken (I use my George Foreman most of the time) and then spread some pesto on top. Add a slice of provolone and allow it to melt some.
So good and so easy.

BBQ Chicken Pizza

BBQ Chicken Pizza
pizza dough, either the canned pillsbury kind of Trader Joe's is my favorite
leftover chicken (or rotisserie pieces)
BBQ sauce (honey BBQ, or whatever you have)
shredded cheese- mozzarella, sharp white cheddar, whatever sounds good
optional - peppers, onions
I like to get the fresh pizza dough from Trader Joe's. Spread out the pizza dough the best you can- my pizza's are never round and usually look more like Oklahoma than even a proper rectangle. They taste pretty good, though. Put some BBQ sauce on the pizza (Christopher likes to do this part) and spread it out with the back of a spoon. Sprinkle on your cheese, then top with chicken and veggies.
Cook in preheated oven at 375 for 20-30 minutes or until crust is brown.
Fettuccine Alfredo

This is a basic Fettuccine Alfredo Recipe from StartCooking.com. I think it would be really good with some steamed broccoli and grilled chicken tossed in too.
Fettuccine Alfredo
1 pound of dried pasta
8 tablespoons of butter - unsalted
1 cup of heavy cream
1 cup of parmesan cheese - freshly grated
1 dash of salt and pepper (adjust to taste)
Optional - steamed broccoli, grilled chicken
Cook the pasta according to the directions on the package.
While the pasta is draining, melt the butter in the same pot you cooked the pasta in. Return the pasta to the pot and add the cream and the parmesan cheese.
Toss over low heat until the pasta is coated.
Season the pasta with salt and pepper to taste and serve immediately.

Roasted Orange Chicken

This is a really easy chicken recipe with a lot of flavor. I love the little pieces of orange rind that stick on top of the chicken- so good. I saw it originally on Robin Miller's Food Network show. I always make all eight breasts of chicken because it is so easy and the leftovers are so versatile.
Roasted Chicken with Smokey Orange Sauce
Ingredients
Cooking spray
8 (5-ounce) skinless chicken breast halves (with bone)
Salt and ground black pepper
1 cup orange marmalade
1 tablespoon reduced-sodium soy sauce
1 teaspoon liquid smoke
Directions
Preheat oven to 400 degrees F. Coat a large roasting pan with cooking spray.
Season chicken all over with salt and black pepper. Arrange chicken in prepared pan and set aside.
In a small bowl, combine orange marmalade, soy sauce and liquid smoke. Mix until blended. Pour mixture over chicken.
Roast 35 minutes, until chicken is cooked through. Serve 4 chicken breast halves with this meal and refrigerate remaining chicken until ready to use.
Yield: 4 servings (with leftovers for additional meals such as Robin's Chicken Quesadillas and Thai Chicken Salad)

Salsa Chicken
My mom and I made this last week, and it was so good and very easy. Jason said it was the best and most moist chicken he has had ever!
Salsa Chicken
1 T cumin
1 T chili powder
1 1/2 tsp. garlic powder
1 t. sea salt
1 t. pepper
lime juice
4 chicken breasts
16 oz jar of salsa (My fave is Safeway Select Black Bean Salsa)
Make a rub using the cumin, chili powder, garlic powder, salt and pepper. Rub over 4 chicken breasts that have been patted dry with paper towel. Spray a 9x13 pan (I use olive oil spray) lightly and then put chicken down in pan. I only season the top side, which seems to be plenty. Give each of the breasts a squirt of lime juice if you have it.
Dump the salsa over the top of the chicken breasts, and cook uncovered at 350 for 30-45 minutes. Cut into the fattest breast when you think you are done to make sure there is no pink left. Add some shredded cheddar cheese for the last 10 minutes of cooking time. (I did this after I cut into the first breast. I didnt see any pink for sure, but it seemed a little too juicy still, so I added cheese and cooked for 10 more minutes, and it was very moist still.)
I served with Spanish Rice (Mahatma brand, but you can also use white rice seasoned with chicken rub and some salsa) and a can of black beans, which I added some chili powder and cumin to and simmered for 10-15 minutes, to help the juice thicken a bit.
Yummy and healthy!!!
Mediterranean Pasta Toss
My awesome neighbor made this for me right after I had my son. It is so good, and I swear that it is even better reheated- although it is so good fresh too. I also usually use wheat pasta, which I love. I now know that my husband doesn't love it, but he is usually scared of spinach and tomatoes anyway, so I will continue to make it with wheat. :-)
Elaine's Mediterranean Pasta Toss
1 pkg pinenuts
5-6 cloves garlic (chopped well)
1 box penne pasta, cooked
5 oz crumbled feta cheese
1 frozen pkg chopped spinach (thawed and drained)
1 jar sun dried tomatoes in oil (julienne cut) - you can find them in the produce section
In olive oil, brown pinenuts and add garlic. Saute and add tomatoes (including oil), spinach and saute and warm through. Throw over cooked pasta, add a little more olive oil and the feta cheese. Toss and serve.
Enjoy!
